EXCLUSIVE HOST OFFER SAVE 40% MAHALO HIGHBALL TUMBLERS Preparation time: 20 minutes Cooking time: 15 minutes Makes: 4 - 5 pies Ingredients 1⁄2 small brown onion, quartered 1 tbsp olive oil 125g lean minced beef 1⁄2 tsp smoked paprika 1 tbsp sweet paprika 1⁄2 green capsicum, deseeded and quartered 1 fresh jalapeño chilli or mild green chilli, deseeded and roughly chopped 1⁄2 cup diced canned tomatoes 1⁄2 cup canned red kidney beans, rinsed Tabasco to taste Ground salt and pepper to taste 2-2 1⁄2 sheets ready-made short crust pastry, thawed 1 egg yolk, lightly beaten for glazing Method – Filling 1. Preheat oven to 180°C. Place TupperChefTM Baking Sheet on a baking tray and set aside. 2. Place onions in the Turbo ChefTM and process until finely chopped. 3. Heat oil in Compact Cookware Frying Pan over medium heat, add onion and cook until soft. 4. Add minced meat and cook until meat is lightly browned. 5. Stir through the smoked and sweet paprikas and continue cooking for 1 minute. 6. Finely chop capsicum and chilli in the Turbo Chef and add to pan along with tomatoes. 7. Cook until any excess liquid has evaporated. 8. Remove from heat and stir through kidney beans, and tabasco. Season to taste and allow to cool before forming the pies. Method – Forming the pies 1. Using the cutter sides of the Mini Pie Shaper, cut out a pastry pie base and a vented top. 2. Gently press one pastry base into the Mini Pie Shaper and brush the edges with egg yolk. 3. Place about 4 tablespoons of filling into the pie-well and cover with pastry pie top. 4. Close Mini Pie Shaper and gently squeeze the base and the top together. 5. Turn the pie out, vent side up, onto the Baking Sheet and repeat process for rest of the pies. 6. Brush pies with egg yolk and bake in oven for 15 minutes or until pastry is golden.
