Preparation time: 10 minutes Cooking time: 15 minutes Serves: 4 –5 Ingredients 2 tbs olive oil 1 brown onion, finely diced 2 cloves garlic, minced 100g short cut bacon, cut into matchsticks 1⁄2 tsp smoked paprika 2 tbs sweet paprika 2 bay leaves 1 x 400g can diced Italian tomatoes 1 x 400g can red kidney beans, drained and rinsed 1 x 400g can butter beans, drained and rinsed 1 x 400g can cannellini beans, drained and rinsed 1 tbs fresh thyme leaves To Serve Warm crusty bread 3 good quality Chorizo sausages, split down middle, grilled and sliced (optional) Method 1. Place oil, onion, garlic and bacon in UltraProTM 1.5L Round and microwave uncovered on high for 3 – 4 minutes stirring after each minute until onion is soft. 2. Add smoked and sweet paprika, bay leaves, tomatoes and beans and stir to combine. 3. Place cover on UltraPro 1.5L Round and cook in microwave on medium level for five minutes. 4. Stir through thyme leaves. Kitchen Notes: If recipe is baked in conventional oven then a small amount of beef stock could be added to stop it drying out. This recipe has been tested in an 800 watt microwave. Please check your microwave if necessary. (High 800 watts; Medium High 650 watts; Medium 500 watts).
