1 ingredients 90g (2⁄3cup) self-raising flour 80g (1⁄3cup) caster sugar 30g (1⁄3cup) desiccated coconut 75g unsalted butter, softened 2 eggs 1 tbs milk 2 tsp vanilla extract icing: 125g softened butter 11⁄2 cups icing sugar 1-2 tbs milk Food colouring Variety of edible cake toppers Method 1. Preheat oven to 180°C. Place TupperChefTM Muffin form on a metal tray. 2. Using the bake 2 basics sift ’N stor, sift the flour into the bake 2 basics Mix-N-Pour. Add the sugar, coconut and butter. 3. Combine the eggs, milk and vanilla extract in the bake 2 basics Quick shake, shake well and add to the flour mixture. 4. With the splashguard on the bake 2 basics Mix-N-Pour, combine the mixture on low speed with electric beaters, then beat on high for 11⁄2 minutes. 5. Using the TupperChef spatula Medium, divide the mixture evenly between the 7 muffin cavities (avoid filling more than 2⁄3 full). 6. Bake in the bottom third of the oven for 20 minutes or until golden and just firm. Stand for 5 minutes before turning out. Allow to cool completely on a cake rack. 7. While your TupCakes are cooling make frosting. Use an electric mixer to cream butter and sugar, then add milk and food colouring, beat until smooth. Use the Decorating bag with different nozzles to pipe frosting onto your TupCakes.
