Ingredients 350g curly pappardelle pasta (or curly fettuccine pasta) 100g walnut pieces1 1 clove garlic, peeled 2 tbs continental parsley leaves, stalks removed 50g softened butter, cut into 1cm cubes 3 tbs olive oil 100g freshly grated parmesan cheese Salt and freshly ground black pepper Optional: drizzle of balsamic vinegar Method 1. Place walnut pieces in Mix ‘N Wave Jug 1.5 Litre and microwave covered at 800 watts for 1 minute, shake to mix and microwave a further minute. Cool slightly. 2. Place pasta in Microwave Pasta Cooker. Add cold water to the maximum water line. Microwave uncovered at 800 watts for 20 minutes (15 minutes if using fettuccine). Cover and let stand for 4 minutes2. 3. While pasta is cooking, rub small handfuls of nuts between fingers and discard any loose skins. Place nuts, garlic, parsley, oil and butter into the Smooth Chopper with the blade attachment. Process 20-25 times or until a coarse paste forms. Remove blade and stir through half the grated parmesan. Season to taste with salt and pepper. Set aside. 4. Drain water from Pasta Cooker leaving a little of the cooking liquid behind. Transfer to the Table Collection 2 Litre Platter and stir walnut sauce through the pasta using the TupperChefTM Medium Spatula until evenly distributed. 5. Serve topped with extra grated parmesan to taste and a drizzle of balsamic vinegar.
